Once April rolls around, it’s back to 6 day work weeks, and sometimes 7 so I am cherishing every moment that I get to spend with my family. I’m never home for breakfast since I’m in the office before the sun rises about the horizon and she has been raving all week about how awesome her homemade, made from scratch, pancakes are. Definitely AMAZING and the best part is that it is organic! The wife and I have been craving Dat Cajun Guy so we drove out to Haleiwa to give it a try. Our trips out to the North Shore always ends with us getting shrimp. If you love Cajun, spicy food–you definitely need to try it. Not to knock any of the shrimp trucks out on the North Shore, but after I have a plate, I’m just disgustingly full and it usually takes 2-3 days until I feel ‘normal.’ Anyways, I had the Jambalaya and the wife had the New Orleans shrimp and fried pickles. Both were life changing. And free sweet tea refills? Really? You can’t go wrong. On Sunday we finally added to our little garden by adding herbs. CM is growing eggplant, which he actually planted himself with a seed from class and we added organic parsley and mint. Unfortunately, they are out of basil so we will need to try our luck next time. Feel free to let me know of any other herbs/vegetables that we should plant!
